Ingredients:
1 cup cornmeal (I use Red Mill Medium Grind - Organic)
1 cup all purpose flour
2 Tbsp sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp Cajun seasoning
1/4 tsp salt
1/8 tsp ground pepper
1/2 cup milk (room temperature)
1/2 Tbsp white vinegar
2 Tbsp olive oil
1 large egg (room temperature)
3 Tbsp grated onion
Oil for frying (olive oil, vegetable or peanut)
Instructions:
NOTES: Both white and yellow cornmeal are good for making hush puppies but the white cornmeal is a little sweeter. If you like sweetness, add additional sugar. Try maintaining a constant temperature when frying. Use an oil with a high smoking point that is good for frying.
